Baked Chicken Parmesan

8 thin chicken cutlets (1.5 lbs total)
2 eggs
~2 cups bread crumbs
1 24oz jar marinara sauce
1 lb mozzarella
olive oil
salt
pepper

Season chicken cutlets with salt and pepper; dip in beaten egg, then bread crumbs. In batches, cook in olive oil over medium heat until golden. Pour marinara sauce in a large, shallow baking dish; top with the chicken, then mozzarella. Bake at 400º F until golden, 25 to 30 minutes.
